Bánh khéo: small cakes shaped by skilful hands
Flowers, spirals and tiny animals are all shaped by hand. Different bakeries vary both the filling and the technique, so no single form defines bánh khéo.
At a bánh khéo counter, the tiny shapes may catch the eye before their aroma does. Flowers, coils and playful animals display the dexterity that gives the cake its name: khéo means skilful.

Skillful from the moment of cake molding
The baking process requires the worker to be meticulous from dividing the dough, placing the filling to shaping or pressing the mold to shape. The smaller the cake size, the more it takes a pair of skilled and accustomed hands to maintain the uniformity of the lines and keep the soft filling from spilling out of the thin crust. Not all bakery stalls sell identical designs; just by looking at a batch of cakes, you can identify some of the "signatures" and unique styles of each bakery.

When buying bánh khéo as a gift, ask about shelf life and storage. Anyone with allergies to flour, milk, legumes or other ingredients should confirm the filling directly, since the shape reveals little about what is inside. Watching a baker work also shows where the cake's name comes from: quick, precise shaping by hand.
