In a tank or seafood basket, the jagged shell of a spiny sea snail is hard to miss. The meat inside is firm and slightly chewy, and is commonly grilled with scallion oil or boiled with lemongrass. It appears often in Phu Quoc food guides, but that does not mean every restaurant has it every day.

A folk name, not a scientific identification

The Vietnamese name ốc gai refers to the shell’s obvious spines; you may also hear the more descriptive name ốc gai xương rồng. Those market names are useful for ordering, but they are not enough on their own to identify a species scientifically. If the exact species or catch origin matters to you, ask the restaurant rather than guessing from the menu name.

Grilled or boiled, avoid overcooking

Grilling with scallion oil gives the snail a richer aroma, while boiling with lemongrass keeps the flavour cleaner and more delicate. Some kitchens also stir-fry it with tamarind or steam it with aromatics. If it is your first time ordering spiny sea snail, ask the staff how to remove the meat from the shell and taste a piece before adding a lot of dipping sauce; a strong sauce can easily overpower the snail itself.

Ask the current price before ordering

Older food articles sometimes quote prices or describe the snail as scarce, but those figures should not be treated as today’s price. Ask what type and size the restaurant currently has, whether the price is per plate or by weight, and whether cooking charges are included. If you have a mollusc allergy, also ask about the dipping sauce and shared kitchen equipment before ordering.
